In June, Jack Collenette won the Guernsey Institute Apprentice of the Year award. He is currently undertaking his apprenticeship as a chef at the Best Western Moores Hotel.

The 22-year-old was selected by the judges for his positive attitude, impeccable work ethic, and outstanding college grades.

Jack has recently finished his college course in culinary skills, and has worked at the Best Western Moores Hotel, part of the Sarnia Group, for almost seven years.

Jack is currently acting Sous Chef at JB Parker’s.

“I was absolutely thrilled to win Apprentice of the Year; I was a bit shocked when they said my name, but so happy. I had a big smile on my face.

“I must also say a huge thank you to my colleagues and the team at Moores who have supported and guided me. I love it there, it is like a massive family.”

To mark the achievement Andy Coleman recently made a presentation to Jack on behalf of the Guernsey Hospitality Association.

“As a former apprentice chef at the College, I am very aware of the hard work and commitment needed by both the student and their employer to achieve such high standards, so many congratulations to Jack, his employers the Sarnia Hotel Group, and of course to the College.

“Our thanks also to JJ Fox Limited who have donated a wonderful set of top-quality swiss knives; they will serve Jack well throughout his career if he looks after them.”

In addition, the Guernsey Hospitality Association presented a cheque to the value of £250 and restaurant meal vouchers from both The Duke of Normandie and La Barbarie Hotel for Jack to enjoy.

In the long term, Jack wants to run his own kitchen one day. We hope his new knives will set him up well.
